Coca Cola Roast Pork

Ingredients

1.2 - 1.5 kg Saint Meat's Pork Scotch Roast
1 tblsp oil
1.2 litres Coca Cola
Pinch all spice
1 tsp coffee ground
1 cup brown sugar

Method:

1. Pre-heat oven to 180°C.

2. Heat oil in a large frying pan over a medium heat and brown roast well on all sides.

3. Pour Coca Cola over the pork and stir in the all spice, coffee grounds and sugar. Reduce heat and simmer uncovered for 20 minutes, turning twice.

4. Place roast into the pre-heated oven and continue to cook for 1 hour at 180°C.

5. Remove roast and rest for 10 minutes prior to slicing.

6. Serve sliced over rocket salad and garnish with candied walnuts.

Notes: Coke maybe replaced with Marsala or Sherry.
