Crispy roasted pork with spiced cherry sauce

Ingredients

1.2 - 1.5kg Saint Meat's pork loin roast, boned and rolled
Oil
Flaked salt

Spiced Cherry Sauce:
1 cup cherry jam
250mL red wine
1 cup plum sauce
2 cinnamon sticks, cracked
200g fresh cherries

Method:

1. Preheat oven to 220°C.

2. Score pork rind finely using a Stanley knife (your butcher can do this for you). Rub oil and salt into the rind.

3. Place pork roast in a large baking dish and roast in the pre-heated oven for 20 minutes then reduce the oven temperature to 180°C and continue to roast for 1 hour. Remove the dish from the oven and allow the roast to rest for 10 - 15 minutes before slicing.

4. For the spiced cherry sauce, combine the cherry jam, red wine, plum sauce, cinnamon sticks and sugar in a small saucepan and stir over a low heat until the liquid boils. Simmer over a low heat stirring until sauce is syrupy.

5. Add the fresh cherries to the sauce and simmer for a further 2 minutes.

6. To serve, slice pork roast into thick slices and arrange on a serving plate with spiced cherry sauce and steamed snap peas.

Notes: if cherries are out of season replace with canned black cherries and use the cherry juice in place of red wine.
